Due to the more efficient commercial cooking appliances and the newer cooking oils used, the UL300 now requires about twice as much liquid be used in fire suppression systems in commercial kitchens. That does NOT, however, mean that you need to update your system right away. These new, more stringent requirements only come into effect on newly built commercial kitchens, or when an existing kitchen is remodeled or adds a new piece of large equipment, such as a new fryer.
